All figures are based on estimated hanging weights and will vary. Processing prices are estimated based on standard processing at current processing fees, specialty processing (like we do when we have ours processed) is not included.
Estimated Price:
After processing, each animal will yield roughly 400 – 575 pounds of packaged beef. This results in a total estimated cost for whole beef between $5750.00 – $7000.00 (half this amount for half orders).
Purchase options include whole and half.
The exact price per pound depends on the type of cuts you select. On average, you can expect to pay between $13.00 – $16.50 per pound. Your preferences on trimming, de-boning, and organ meats contribute significantly to the variance in price per pound. For more information on weight and pricing, see the Beef Prices section below.
Deposits:
A NON-REFUNDABLE deposit on your half or whole beef is placed at the time of your order, securing you one of our limited Akaushi calves. We will inform you of the remaining amount on the beef after the hanging weight and the cost of the processing is determined. This will be available to us when your beef is ready for delivery and will be due when delivered or when you pick it up at the processor.

The example below is based on the following assumptions. Actual weights and prices will vary:
A whole beef purchase
Live Weight: 1400 lbs
Hanging Weight: 770 lbs

- Standard Processing at Blue Bonnet: $1.10/lb Hanging Weight & $85 harvesting fee plus Optional Charges (Tenderizing, Deboning, Hamburger PATTIES, Additional Aging, Quartering Beef, Order Split, Hide Return, Ground Beef in 1# Packages) (Bluebonnet Processing Fees)
A Formula for ESTIMATING Hanging Weight and Finished Weight:
Live Weight x 55% = Hanging Weight
Hanging Weight x 60% = Finished Weight
Therefore using Blue Bonnet Processing:
- 1400 x 55% = 770 lbs is our Hanging Weight and what we base our pricing on
- (770 Hanging Weight x $1.10) + Standard Charges + Customer Desired Optional Charges = $1098.00 is an estimated processing fee
- (770 Hanging Weight x $7.50) + $1098.00 = $6873.00
- 770 Hanging Weight x 60% = 462 lbs is the estimated Finished Weight
- $6873.00 (Beef Cost) / 462 Finished Weight = $14.87/lb. is the customer price per pound
- $6873.00 – $750.00 (Deposit) = $6123.00 Final Payment
If you were to purchase a half beef simply divide the above example by two ($6123.00/2). Your total payment would be $3436.50. Your approximate Finished Weight 231 lbs. Subtracting your $375.00 deposit your final payment would then be $3061.50
